This spectacular cured sumac is grown in the Gaziantep region of Turkey. In the Fall, white flowers transform into small, rust-coloured berries that swell into dense clusters. Harvested before they ripen, they are chopped fresh and then cured, an ancient preservation technique of packing the fresh berries in salt.
TASTING NOTES + USE
A bright acidity with a slightly fermented flavour that is complemented by hints of sour cherry. The bright, sour, salty and fermented notes exist in both scent and taste making this spice a Chef favourite. Perfect topping for any dish, including dessert.
